Homemade Deer Bologna

If you're a hunter and would like to make your own deer bologna try the simple recipe below. Deer bologna is delicious either sliced thin for a sandwhich or as sliced thicker and eaten as is.

Ingredients:

  • 10 lbs. ground deer meat
  • 2 1/2 tsp. pepper
  • 1 1/2 tsp. onion powder
  • 2 1/2 tsp. garlic powder
  • 3 tbls. peppercorns
  • 10 tbls. meat tenderizer
  • 2 1/2 tsp. liquid smoke
  • 3 1/2 cup quik cooking oatmeal
  • 3 tbls. mustard seed

Directions:

  • Mix all ingredients well
  • Cover and let stand in refrigerator 24 hours
  • Roll into 2 x 8 inch loaf pans
  • Bake on broiler pan, uncovered for 1 hour at 350 degrees
