Stuffed Celery

Made up of 94% water, celery is considered a great diet food.

Ingredients:

  • 1 lb. celery
  • 1/2 lb. sharp Cheddar cheese, grated
  • 6 oz. cream cheese
  • 1/4 c. jalapeno peppers, finely chopped
  • dash of chili powder

Directions:

  1. Wash celery
  2. Blend cheeses, peppers and chili powder in a mixing bowl
  3. Stuff celery

Green Bean Recipes

Easy Green Bean Casserole

Ingredients:

  • 2 10 oz. pkgs. frozen or fresh cut green beans
  • 3/4 cup of milk
  • 1 can cream of mushroom soup
  • 1/8 tsp. pepper
  • 2 tbls. diced pimento
  • 1 can Durkee french fried onions

Directions:

  • Cook beans in salted water; drain
  • Place in casserole dish
  • Combine milk, soup, pepper
  • Pour over beans
  • Add 1/2 can onions
  • Blend
  • Bake at 350 degrees for 20 minutes
  • Top with remaining onions and pimento
  • Bake additional 5 minutes. Serve

Onion Recipes

Creamed Onions

Ingredients:

  • 1 jar whole onions drained or fresh pearl onions;boiled and cooled
  • 1 1/2 tbls. butter
  • 1 1/2 tbls flour
  • 1 cup milk
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • Pinch of nutmeg

Directions:

  • Melt butter in small sauce pan on low
  • Add flour, blend well,continue cooking on low
  • Gradually add milk, stirring constantly until creamy
  • Add salt, pepper, nutmeg
  • Add onions, simmer additional 5 minutes

French Fried Onion Rings

  • 3 or 4 large onions
  • 1 cup milk
  • 2 eggs
  • 1 cup flour
  • 1/2 tsp. salt
  • Dash of pepper
  • 1 tsp. baking powder
  • 1 Tbsp. salad oil

Slice onions and separate into rings. Blend remaining ingredients until smooth. Dip onion rings into batter. Drip excess from rings and then drop into hot fat. Fry until golden brown.

Potato Recipes

Dinner Casserole

  • 2 c. sliced raw potatoes
  • 2 c. chopped celery
  • 2 c. raw hamburger
  • 1 c. sliced raw onions
  • 1 c. finely cut green peppers
  • 2 c. canned tomatoes

Directions:

  1. Place all ingredients in the crock pot
  2. Cover with water.
  3. Set crock pot to low.
  4. Start in the morning, eat in the evening.

Hot Dog and Potato Casserole

  • 8 cups cooked, shredded potatoes
  • 1 pkg. hot dogs, diced
  • 2 cups Velveeta cheese, cubed
  • 2-1/2 cups milk
  • 1 can mushroom soup
  • 1/2 cup onion, diced
  • Pepper and spices to taste
  1. Preheat oven to 350 degrees
  2. In a large bowl combine potatoes and hot dogs. Set aside.
  3. In a saucepan, heat milk and add cheese. Stir until melted.
  4. Add soup and onion.
  5. Remove from heat and pour over potato, hot dog mixture.
  6. Toss together.
  7. Pour into a buttered 13x9x2" baking pan
  8. Bake at 350 for 1 hour.
Serves 12

Mashed Potato Candy

  • 1/4 c. mashed potatoes
  • 3 Tbsp. cocoa
  • Powdered sugar (about 2-2 1/2 c.)
  • 1 Tbsp. peanut butter (opt.)
  • 1/2 tsp. vanilla
  1. Mix potatoes and cocoa
  2. Add peanut butter and vanilla.
  3. Mix
  4. Add powdered sugar a little at a time until it reaches the desired consistency of fudge.

Note: Coconut or chopped nuts may be added varitey.

Potato Casserole

  • 2 cups mashed potatoes
  • 8 oz. cream cheese, softened
  • 1 sm. onion, finely chopped
  • 2 eggs, well beaten
  • 1 tbsp flour
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1 can (3 oz.)french-fried onion rings, crushed
  1. Combine the first 7 ingredients
  2. Beat 3 minutes at medium speed with electric mixer.
  3. Pour into a greased 1 1/2 quart casserole.
  4. Spread crushed onions evenly over top.
  5. Bake, uncovered, at 300 degrees for 30 to 35 minutes.
