Carrot Cake

Ingredients:

  • 2 1/4 cups flour
  • 4 eggs
  • 1 1/2 cups light brown sugar
  • 1 1/2 cups grated carrots
  • 1 1/3 cups oil
  • 2 1/2 tsp. cinnamon
  • 1 1/2 tsp. baking soda
  • 1 tsp. salt

Directions:

  • Combine all ingredients
  • Mix by hand until well blended
  • Pour into greased 9x13 baking pan
  • Bake for 40 minutes at 350 degrees or until toothpick comes out dry
  • Frost with cream cheese frosting when cool
