Carrot Cake
Ingredients:
- 2 1/4 cups flour
- 4 eggs
- 1 1/2 cups light brown sugar
- 1 1/2 cups grated carrots
- 1 1/3 cups oil
- 2 1/2 tsp. cinnamon
- 1 1/2 tsp. baking soda
- 1 tsp. salt
Directions:
- Combine all ingredients
- Mix by hand until well blended
- Pour into greased 9x13 baking pan
- Bake for 40 minutes at 350 degrees or until toothpick comes out dry
- Frost with cream cheese frosting when cool
