Apple and Coconut Cake
Ingredients:
- 1 cup oil
- 2 cups sugar
- 2 eggs
- 2 cups flour
- 1 tsp baking soda
- 1 tsp salt
- 3 cups chopped apples
- 1 cup coconut
- 3/4 cup chopped pecans
Directions:
- Mix oil, sugar, eggs.
- Add dry ingredients, mix well
- Fold in apples, coconut and nuts until well blended
- Pour in greased 9x13 pan
- Bake for 45 minutes at 350 degrees
- When cool, frost with cream cheese frosting
- Optional additions: Blend in rum extract to frosting
- Sprinkle shredded coconut on top and/or chopped nuts
Cake Tip
- Preheat your oven 12 to 15 minutes before baking
