Apple and Coconut Cake

Ingredients:

  • 1 cup oil
  • 2 cups sugar
  • 2 eggs
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 3 cups chopped apples
  • 1 cup coconut
  • 3/4 cup chopped pecans

Directions:

  • Mix oil, sugar, eggs.
  • Add dry ingredients, mix well
  • Fold in apples, coconut and nuts until well blended
  • Pour in greased 9x13 pan
  • Bake for 45 minutes at 350 degrees
  • When cool, frost with cream cheese frosting
  • Optional additions: Blend in rum extract to frosting
  • Sprinkle shredded coconut on top and/or chopped nuts

Cake Tip

  • Preheat your oven 12 to 15 minutes before baking
