Waikiki Chicken Recipe

Ingredients:

  • 1 chicken, cut up
  • 1/2 c. flour
  • 1/3 c. salad oil
  • 1 tsp. salt
  • 1/4 tsp. pepper

Directions:

  1. Pre-heat oven to 350 degrees
  2. Coat chicken with flour
  3. Heat oil in large frying pan
  4. Brown chicken on all sides
  5. Remove to a shallow roasting pan; arrange pieces skin side up
  6. Sprinkle with salt and pepper
  7. Prepare sauce

Sauce ingredients:

  • 1 (1 lb. 4 oz.) can sliced pineapple
  • 1 c. sugar
  • 2 Tbsp. cornstarch
  • 3/4 c. cider vinegar
  • 1 Tbsp. soy sauce
  • 1/4 tsp. ginger
  • 1 bouillon cube (chicken)
  • 1 large green pepper, sliced

Sauce directions:

  1. Drain pineapple syrup into a 2 cup measure
  2. Add water to make 1 1/4 cups
  3. Mix in cornstarch to dissolve
  4. Combine sugar, syrup, and cornstarch in a medium saucepan
  5. Bring to a boil for 2 minutes
  6. Pour over chicken
  7. Bake uncovered for 30 minutes
  8. Add pineapple slices and peppers
  9. Bake for 30 minutes
  10. Serve with rice
