Walnut Chicken Recipe
Ingredients:
- 1 1/3 lb. whole chicken breasts
- 3 Tbsp. soy sauce
- 2 tsp. cornstarch
- 2 Tbsp. dry sherry
- 1 tsp. grated ginger root
- 1 tsp. sugar
- 1/2 tsp. salt
- 1/2 tsp. crushed red pepper
- 2 Tbsp. cooking oil
- 2 medium green peppers, cut into 3/4 inch pieces
- 4 green onions, bias sliced into 1 inch lengths
- 1 c. walnut halves
- whole red peppers (optional)
- cilantro (optional)
- rice, cooked
Directions:
- Bone chicken breasts, skin and cut into half lengthwise
- Cut chicken into 1 inch pieces
- Set chicken aside
- Stir soy sauce into cornstarch in a small bowl
- Stir in dry sherry, ginger root, sugar, salt and red pepper
- Set aside
- Over high heat, preheat a wok or large skillet
- Add cooking oil
- In hot oil, stir-fry green peppers and green onions for 2 minutes or until
crisp-tender
- Remove from wok or skillet
- Add walnuts to wok or skillet (If necessary, add more oil)
- Add half of the chicken to the hot wok or skillet
- Stir-fry the chicken for two minutes
- Remove the chicken from the wok or skillet
- Stir-fry the remaining chicken for two minutes
- Return all the chicken to the wok or skillet
- Stir soy mixture into the chicken
- Stir and cook until thick and bubbly
- Stir in vegetables and walnuts
- Cover and cook one minute
- Serve chicken and vegetables immediately
- Garnish with whole red peppers and fresh cilantro if you like
- Serve with hot cooked rice
Makes four to six servings
