Walnut Chicken Recipe

Ingredients:

  • 1 1/3 lb. whole chicken breasts
  • 3 Tbsp. soy sauce
  • 2 tsp. cornstarch
  • 2 Tbsp. dry sherry
  • 1 tsp. grated ginger root
  • 1 tsp. sugar
  • 1/2 tsp. salt
  • 1/2 tsp. crushed red pepper
  • 2 Tbsp. cooking oil
  • 2 medium green peppers, cut into 3/4 inch pieces
  • 4 green onions, bias sliced into 1 inch lengths
  • 1 c. walnut halves
  • whole red peppers (optional)
  • cilantro (optional)
  • rice, cooked

Directions:

  1. Bone chicken breasts, skin and cut into half lengthwise
  2. Cut chicken into 1 inch pieces
  3. Set chicken aside
  4. Stir soy sauce into cornstarch in a small bowl
  5. Stir in dry sherry, ginger root, sugar, salt and red pepper
  6. Set aside
  7. Over high heat, preheat a wok or large skillet
  8. Add cooking oil
  9. In hot oil, stir-fry green peppers and green onions for 2 minutes or until crisp-tender
  10. Remove from wok or skillet
  11. Add walnuts to wok or skillet (If necessary, add more oil)
  12. Add half of the chicken to the hot wok or skillet
  13. Stir-fry the chicken for two minutes
  14. Remove the chicken from the wok or skillet
  15. Stir-fry the remaining chicken for two minutes
  16. Return all the chicken to the wok or skillet
  17. Stir soy mixture into the chicken
  18. Stir and cook until thick and bubbly
  19. Stir in vegetables and walnuts
  20. Cover and cook one minute
  21. Serve chicken and vegetables immediately
  22. Garnish with whole red peppers and fresh cilantro if you like
  23. Serve with hot cooked rice

Makes four to six servings
