Chicken alla Pomodora

Ingredients:

  • 4 Boneless chicken breast
  • 2 tbls. flour
  • 4 tbls. butter
  • 1/2 lb. slice, fresh mushrooms
  • 1 clove minced garlic
  • 1 small onion; chopped
  • 1 green pepper; diced
  • 1/2 cup white wine
  • 1/2 tsp. tarragon
  • 32 oz. tomatoe sauce or diced tomatoes
  • 1 tbls. chopped parsely

Directions:

  • Dredge chicken in flour seasoned with salt and pepper
  • Brown in 2 tbls. butter
  • Separately saute mushrooms, garlic, onion, green pepper in butter
  • Add wine and cook 5 minutes
  • Add tomatoe sauce or diced tomatoes to chicken
  • Add mushroom mixture and tarragon
  • Cover and simmer for 1 hour at 350 degrees
  • Sprinkle with parsley
  • Serve with linguine and garlic bread
