Chicken alla Pomodora
Ingredients:
- 4 Boneless chicken breast
- 2 tbls. flour
- 4 tbls. butter
- 1/2 lb. slice, fresh mushrooms
- 1 clove minced garlic
- 1 small onion; chopped
- 1 green pepper; diced
- 1/2 cup white wine
- 1/2 tsp. tarragon
- 32 oz. tomatoe sauce or diced tomatoes
- 1 tbls. chopped parsely
Directions:
- Dredge chicken in flour seasoned with salt and pepper
- Brown in 2 tbls. butter
- Separately saute mushrooms, garlic, onion, green pepper in butter
- Add wine and cook 5 minutes
- Add tomatoe sauce or diced tomatoes to chicken
- Add mushroom mixture and tarragon
- Cover and simmer for 1 hour at 350 degrees
- Sprinkle with parsley
- Serve with linguine and garlic bread
