Chicken Rigata with Basil & Spinach

Ingredients:

  • 1 lb. boneless, skinless chicken strips
  • 2 tbls. olive oil
  • small chopped onion
  • 2 cloves chopped garlic
  • 1 lb. rigata
  • 2 cans diced tomatoes(plain or flavored according to taste)
  • 1 6oz. package fresh baby spinach
  • 8-10 fresh basil leaves
  • 1/4 cup parmesan cheese

Directions:

  • In large saute pan, brown chicken in oil, onion & garlic
  • Add diced tomatoes; simmer 20 minutes
  • Cook rigata according to directions.
  • Place drained rigata in large casserole dish
  • Toss in tomatoes, spinach, basil
  • Top with parmesan cheese. Serve
