Chicken Rigata with Basil & Spinach
Ingredients:
- 1 lb. boneless, skinless chicken strips
- 2 tbls. olive oil
- small chopped onion
- 2 cloves chopped garlic
- 1 lb. rigata
- 2 cans diced tomatoes(plain or flavored according to taste)
- 1 6oz. package fresh baby spinach
- 8-10 fresh basil leaves
- 1/4 cup parmesan cheese
Directions:
- In large saute pan, brown chicken in oil, onion & garlic
- Add diced tomatoes; simmer 20 minutes
- Cook rigata according to directions.
- Place drained rigata in large casserole dish
- Toss in tomatoes, spinach, basil
- Top with parmesan cheese. Serve
