The basic Irish soda bread is made with flour, baking soda, salt, and soured milk (or buttermilk). That's it! Buttermilk is an essential ingredient in Irish soda bread. The acid reacts with the base of the baking soda to provide the leavening. Soda bread is only good for a day or two, so eat it quickly. Which usually isn't a problem.
Irish Soda Bread containing raisins is called "Spotted Dog".
Ingredients:
- 1 2/3 cups flour
- 2 1/2 tbls. sugar
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp salt
- 1 cup raisins
- 2 tsp. caraway seeds
- 1 egg
- 1 tsp. grated orange zest
- 2/3 cup buttermilk
- 1/4 cup warm, melted, unsalted butter(1/2 stick)
Directions:
- Preheat oven to 375 degrees. Grease large cookie sheet
- In large bowl, mix flour, sugar, baking powder, soda and salt
- Stir in caraway seeds and raisins
- In another bowl, mix egg, orange zest, buttermilk and butter
- Add egg mixture to flour mixture; stir until moistened
- Batter will be stiff and sticky
- Scrape batter onto cookie sheet in a mound(6-7inches in diameter)
- With a sharp floured knife, slash an X about 1/2 inch deep on top
- Bake 30-40 minutes or until golden brown and a toothpick comes put clean
- Transfer to rack to cool
