Swiss Steak with Rice

Ingredients:

  • 1 lb. beef sirloin or chuck steak cut in thin strips
  • 2 tbls. olive oil
  • 2 tbls. flour
  • 1 cloves chopped garlic
  • 1 green pepper cut into thin strips(or frozen)
  • 1 red pepper cut in thin strips(or frozen)
  • 1 small chopped onion or 1 envelope onion soup mix
  • 1 Large can of stewed tomatoes (or diced)
  • 2 cups cooked white or brown rice

Directions:

  • Dredge beef in flour
  • In large skillet, brown beef in oil
  • Add garlic, peppers, onions
  • If using onion soup mix, add 1/2 cup water
  • Saute 10 minutes
  • Add tomatoes; simmer 20 minutes
  • Cook rice according to directions
  • Place cooked rice on serving platter; pour contents of skillet over rice
