Some are sweet, some are tangy, some are spicy. It's all a matter of your personal taste. The ingredients of regional barbecue sauces vary as you move across the country. Barbecue sauce has been around since the late 1700's. Back then, it was pretty much just vinegar. It was something you dipped the meat in before you ate it.
Sugar-based sauces can burn. To avoid this pre-cook the meat on the grill then brush frequently with sauce during the last 10 to 15 minutes. Tomatoes can burn also and leave a bitter taste, so be careful if your sauce has tomatoes in it. Whenever possible use fresh ingredients in your sauce. That pretty much holds true for everything you cook.
