Greek Salad

Ingredients:

  • 1 cucumber, peeled, sliced
  • 4 plum tomatoes, sliced
  • 1 small red onion, finely chopped
  • 1/8 head green cabbage
  • 1/8 head lettuce
  • 1 green pepper, seeded & sliced
  • 1/3 cup olives, pitted
  • 1 tablespoon parsley, fresh and chopped
  • 1 tablespoon oregano, fresh and chopped
  • 1 pinch salt
  • fresh ground pepper
  • 1 tablespoon olive oil
  • 2 tablespoons fresh lemon juice

Directions:

  1. Toss everything into a bowl
  2. Mix it up
  3. Serve

Salad Supreme

Ingredients:

  • 1 head Romaine lettuce torn into large pieces in large serving bowl
  • 1/2 lb. deli corned beef, cut in slices and strips
  • 1/4 lb. deli turkey breast, cut in slices and strips
  • 1/4 cup drained sauerkraut (optional)
  • 1 cup Swiss or Jarlsburg cheese, cubed
  • 1 large tomato, cut in wedges
  • 1 cup pumpernickel croutons
  • 1/2 cup Thousand Island salad dressing

Directions:

  1. Toss lettuce, tomato, croutons, and dressing in large serving bowl
  2. Add meat and cheese and optional sauerkraut
  3. Toss together lightly
  4. Serve

Spinach Salad

Ingredients:

  • 1 pkg. baby spinach leaves; washed and drained
  • 1/2 to 1 cup of your favorite italian salad dressing
  • 1/4 to 1/2 cup crumbled feta cheese
  • 2 tablespoons bacon bits

Directions:

  1. Toss together all ingredients in a large salad bowl
  2. Enjoy!

Summer Salad

Ingredients:

Layer the following in a 13x9 inch pan:

  • 1 head lettuce, chopped into bite-size pieces
  • 3/4 lb. bacon, fried crisp and broken into pieces
  • 10 oz. frozen peas

Directions:

  1. Spread a layer of mayonnaise over the top and then sprinkle 6 to 8 ounces (shredded) mild Cheddar cheese over the mayonnaise.
  2. Cover and regrigerate 6 to 8 hours before serving.
