Appetizers
When choosing an appetizer, keep in mind it should require a minimum amount of fuss. Appetizers should encourage mingling and conversation. Balance a hot appetizer with a cold appetizer, a crisp one with a soft one, and a sweet one with a savory one.
Cheese
Cheese has more flavor when served at room temperature. Set it out about 30 minutes before it is to be consumed. Only set out what you think is going to be consumed. Keep the rest tightly wrapped in the refridgerator.

Chocolate
If you want to melt chocolate, grease the pan in which you are going to melt it.
Onions
Before you peel an onion, pour boiling water over it and let it stand for 3 minutes. Then place it in cold water for about a minute. Now you can prepare it without crying.
Substitutions
- 1 tablespoon cornstarch = 2 tablespoons four
- 3 tablespoons cocoa plus 1 tablespoon butter or margarine = 1 square baking chocolate
- 1 cup minus 2 tablespoons sifted all purpose flour = 1 cup sifted cake flour
- 1/4 teaspoon baking soda plus 1/2 teaspoon cream of tartar = 1 teaspoon baking powder
